        Shrimp Lo Mein

prep time : 20 minutes 

INGREDIENTS : 

  • 8 ounces lo mein noodles
  • 2 tablespoons canola oil
  •  peeled  medium shrimp
  •  snow peas, trimmed
  • 4 scallions, thinly sliced, white and green parts separated
  • 2 cloves garlic, chopped
  •  salt
  • 1/4 cup oyster sauce 
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • crushed red pepper 



DIRECTIONS : 

  • Cook the noodles according to the package directions.
  • heat the oil in a large frying pan over high heat. Add the shrimp,scallion whites,garlic, snow peas, and ½ teaspoon salt. Cook, 2 to 3 minutes, until the shrimp are cooked through . 
  • Add the oyster sauce,soy sauce, vinegar and ¼ cup water. cook,1 to 2 minutes, until thickened Add the noodles and flip over to combine. Serve sprinkled with scallion greens and the red pepper .



Supreme Pizza

prep time : 30 minutes

INGREDIENTS : 

  • 4 tablespoons olive oil
  • 1pound whole-wheat pizza dough, at room temperature
  • 8 ounces mozzarella, grated
  • 2 ounces button or cremini mushrooms, thinly sliced 
  • 1/2 red bell pepper, thinly sliced
  • 1/2 small red onion, thinly sliced
  • 2 ounces sliced pepperoni
  • 1/2 cup grated Parmesan 
  • 6 cups baby arugula 
  • 1 tablespoon red wine vinega
  • kosher salt and black pepper 



DIRECTIONS : 
  • first of all , choose a rack in the lowest position and Heat oven to 450° F . Coat a large rimmed baking sheet with 2 tablespoons of the oil. Stretch the dough into a large oval and place on the prepared sheet .  Bake 8 to 10 minutes until the crust is firm but still pale . 
  • Remove the crust from oven and top with half the mozzarella, then add mushrooms, the tomatoes, the remaning half of the mozzarella, onion, bell pepper, pepperoni,  and the Parmesan. Bake 10 to 12 minutes more until the crust is golden brown . 
  • The last step, In a large pot put the arugula with the vinegar, the remaining 2 tablespoons of oil, and ¼ teaspoon each salt and black pepper. Serve with the pizza.
