            Crispy Breaded Shrimp With Cannellini Beans

Prep time : 20 min 

INGREDIENTS : 

  • ½ cup bread crumbs
  • 2 tablespoons chopped fresh rosemary
  • 5 tablespoons olive oil
  • kosher salt and black pepper
  • peeled and deveined medium shrimp
  • 1 clove chopped garlic
  • 1 19-ounce can cannellini beans, rinsed
  • 2 bunches arugula, thick stems removed 

DIRECTIONS : 

  • First of all , Heat oven to 400° F. mix  rosemary, the bread crumbs,3 tablespoons oil, ¼ teaspoon pepper and ½ teaspoon salt in a skillet then Add the shrimp and toss to coat.
  • put the shrimp and any excess crumbs in a baking sheet. Bake for 10 to 12 minutes until the shrimp are cooked through and the crumbs get crispy .
  • during that , heat the remaining oil in a medium frying pan on medium-high heat. Add the garlic and cook with stirring, for 30 seconds. Add the beans, ¼ cup water, and ¼ teaspoon each salt and pepper. Cook for 2 to 3 minutes until well heated .
  • the last step put it out from heat and toss with the arugula. Serve the beans with the shrimp and sprinkle any remaining crumbs over the top .
