There is a misconception among many people , they think that healthy food must be boring and bad taste or it takes fer hours to prepare . the fact is there are many healthy recipes. which you can prepare in just 30 minutes and very delicious . 
Quinoa Enchilada Casserole
Ingredients :
- 1 cup quinoa
 - 1 (10-ounce) can Old El Paso mild enchilada sauce
 - 1 (4.5-ounce) can Old El Paso chopped green chiles, drained
 - 1/2 cup corn kernels, frozen, canned or roasted
 - 1/2 cup canned black beans, drained and rinsed
 - 2 tablespoons chopped fresh cilantro leaves
 - 1/2 teaspoon cumin
 - 1/2 teaspoon chili powder
 - Kosher salt and freshly ground black pepper, to taste
 - 3/4 cup shredded cheddar cheese, divided
 - 3/4 cup shredded mozzarella cheese, divided
 - 1 avocado, halved, seeded, peeled and diced
 - 1 Roma tomato, diced
 
Directions : 
- First , cook quinoa according to the instructions on its package in a large pan of 2 cups of water
 - Then heat your oven to 375 degrees F . sprinkle a large baking dish with nonstick spray .
 - Mix quinoa , green chiles , black beans , corn , enchilada sauce , cilantro, cumin and chili powder season with salt and pepper, in a large pan . Stir in 1/2 cup cheddar cheese and 1/2 cup mozzarella cheese .
 - Last step , put the quinoa mixture into the prepared baking dish with the remaining cheese . and put it into oven for about 15 minutes until cheese and bubbly have melted , serve hot with avocado and tomato if desired .
