Breakfast Burrito
Ingredients :
- 2 teaspoons canola oil
- 1/2 small red onion, diced
- 1 red bell pepper, seeded and diced
- 1 cup drained, rinsed canned black beans, preferably low-sodium
- 1/4 teaspoon chili flakes
- Salt and freshly ground black pepper
- 4 eggs and 4 egg whites
- 1/3 cup shredded pepper Jack cheese
- Cooking spray
- 4 whole-wheat tortillas (burrito-size)
- 1/4 cup reduced-fat sour cream
- 1/4 cup salsa
- 1 large tomato, seeded and diced
- 1 small avocado ,cubed
- Hot sauce
Directions :
- First of all heat , over a medium heat , the canola oil in a large frying pan . then cook the peppers and the onions for about 8 minutes until onions get softened and the peppers get charred . Add red pepper flakes and black beans and keep cooking for another 3 minutes until warmed through . Season with salt and pepper and transfer to a plate .
- Whisk the eggs and stir in the cheese . sprinkle the pan with cooking spray and reheat the frying pan over a medium heat .
- Add eggs and cook for 3 minutes on low heat until cooked through . sprinkle each tortilla with 1 tablespoon each salsa and sour cream . then layer with 1/4 of the scrambled eggs , 1/4 of the avocado and 1/4 of the black bean mixturesome diced tomato . season with hot sauce , Roll up burrito-style and it is ready to serve .
