Lemon Cupcakes with Citrus Icing

Ingredients : ( cup cakes)
- 1 2/3 cups unbleached all-purpose flour
- 1 cup sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup safflower oil
- 2 eggs
- 1/3 cup fat-free milk
- 1/4 cup freshly squeezed lemon juice
- 1 tsp freshly grated lemon zest
- 1 tsp lemon extract
- 1/2 tsp vanilla extract
Icing :
- 1½ cups confectioners' sugar
- 2 Tbsp freshly squeezed orange juice
- 1 tsp freshly grated orange zest
Directions :
- First of all , preheat your oven 350°F. Line a 12-cup muffin pan with paper liners .
- To prepare the cupcakes , mix the sugar , flour , baking soda , baking powder and salt in a medium bowl then combine eggs , lemon juice , oil , milk , lemon extract , lemon zest and vanilla . transfer the mixture in a separate bowl . Add to the flour mixture and stir until smooth .
- Spoon the butter into the muffin cups and bake until lightly golden and the cupcakes are springy when gently touched ( for about 17-19 minutes ) . then place a bowl on a rack and allow cool for 5 minutes . Remove the cupcakes from the pan, transfer to the rack, and let cool completely .
- Last step , to prepare the icing , combine the orange juice , confectioners' sugar and orange zest in medium a bowl and stil until smooth ( about 2 minutes ) then spray some of the glaze over each cupcake with a small spatula and let stand for at least 10 minutes before serving .
