Mini Easter cheesecakes
Ingredients :
- 2 tablespoons boiling water
- 2 teaspoons powdered gelatin
- 6 plain chocolate biscuits (see note)
- 20 g butter, melted
- 250 g cream cheese, softened
- 2 tablespoons caster sugar
- 1/4 cup pure cream, lightly whipped
- 50 g milk chocolate, melted
- 8 caramel-filled mini Easter eggs
- Cocoa powder, for dusting
Directions :
- First step , line 8 holes of a 1/3 cup-capacity muffin pan with paper cases . boil water in a heatproof pitcher , spray over gelatin . whisk until dissolve gelatin with a fork .
- Second step , Process biscuits until mixture resembles fine breadcrumbs . then add butter and combine . Divide mixture between cases and press using the back of a teaspoon . cool until firm ( about 10 minutes In the refrigerator ) .
- Third step , mix sugar and cream cheese in a medium pan with an electric mixer until smooth then add Add gelatin mixture and beat again to combine . Add melted chocolate . Gently fold mixture to create a swirled effect. Spoon into cases. Smooth surface .
- Forth step , put 1 Easter egg into the centre of each cheesecake . put in fridge covered for about 3-4 hours until set .
- Last step , Remove cheese cakes from pan and dust with cocoa to give it flavor . Serve immediately .
